pits1This week’s wing stop was Pie in the Sky in Madison, where my friend Jason remembered having some tasty wings with good heat. Several flavors are available, of varying heat levels. The hottest Pie in the Sky wings are the Mad Buffalo wings. I had the 10-piece, which came with dressing and celery. At $11.98 before tip, these are a bit high. We got good service from Becca.

Quality: 8/10. Wings were not especially large, but everything that was there was good meat. They were cooked well and served at an appealing, ready-to-eat temperature.

Flavor: 8/10. These are tasty buffalo wings indeed. Sauced modestly, but the sauce has enough tang to carry a lot of taste in a small amount. Prominent and pleasant pepper vibe.

Heat: 4/10. There is a little bit of buildup, but the ceiling is low here. Progression is over by the third wing, and stops well short of a sweat or endorphin rush. If I just had these blind, I would guess that, in a restaurant’s offerings, they were closer to the middle of the heat range than the top.
